Extract Audio from a DVD or video

To my knowledge, there's really no easy way to do that. In a nutshell, you'll have to rip your DVD onto your HDD using a ripping software (like DVD Decrypter). You can choose the audio tracks you want ripped. Then, you'll have to convert those audio tracks (.ac3, .wav, .mp2 or .dts) with an audio encoder.

The only other way I can think of is one of those softs that records every sound your computer's audio soundcard makes. Basically, just run the soft, play your DVD and wait till the end of the video. Never try that myself...

If you're using a Mac, try Audio Hijack. It woks similar to how Djaybee said - you tell it to record from the Mac's internal DVD player, play the DVD and it records everything.
